Blue Matcha Magic Fizz
Gin and magic? My two favorite things!

Ingredients
- 3oz (2 shots)Gin
- 1.5oz (I shot)Egg White
- 0.75oz (1/2 Shot)Sugar Syrup
- 1/3 level tsp Blue Matcha (butterfly pea powder)
- 3oz (2 Shots)Soda Water
- 0.75oz (1/2 Shot)Lemon Juice
- Ice
Here's your classic Gin Fizz with a little bit of extra magic mixed in. With just a little bit of blue matcha and a dash of lemon juice you can amaze your friends as the colour changes before their eyes!
Method
In your shaker add the Gin, egg white, sugar syrup and blue matcha powder. Add ice and shake.
Once chilled, strain out the ice and firmly reshake to build foam. 30 Seconds should be enough.
In a highball glass add 1.5oz of Soda Water, then pour in the gin mixture. After a few seconds and the rest of the Soda Water.
Once the foam has settled make a hole in the center with a straw, then pour the lemon juice through the hole into the cocktail. The change should happen immediately, but if needed a little stir should start the magic.
If needed top off with more soda water and garnish with a slice of lemon.
